Pork Teriyaki

When you’e short on time but still desire a flavorful home cooked meal instead of opting for fast food, I have just the thing. This pork teriyaki is a weeknight cheat code. The vegetables don’t require refined slicing and dicing. There’s no need to marinade the protein a head of time. It only uses one pan from start to finish. And, it comes together in under 20 minutes!? Now, that is my kind of quick and effective meal.

This isn’t a ground breaking recipe that you use to impress guests. It’s not even a recipe that will introduce you to a new concept. It’s simple and straight to the point, which is what most of us need in our busy lives. It also uses a store bought sauce. insert gasp. I know, I know. I have a recipe for homemade teriyaki sauce, however, in desperate times, a store bought sauce will work just fine.

The brand I use, and that is a frequent in our household, is House of Tsang. If this brand is not available to you, don’t fret. The beauty of this recipe is that you can use your favorite bottled sauce. I’m only presenting you with an idea to incorporate into your weeknight meal plan. A blueprint rather than a fully furnished building that you have to take as is.

The three key ingredients here are a protein, vegetables and a sauce. If you do not eat pork, substitute it for chicken. If you like broccoli over asparagus, change it. The cooking time may vary as you begin to make substitutions but if there was a time to experiment with little worry of failing, this would be the time.

I would also like to note that the use of dark soy sauce is purely optional. I tend to cook a lot of asian inspired dishes in my home, so I had it on hand. Dark soy sauce deepens the color and enhances the umami flavor, which I throughly enjoy. Regular soy sauce can be used instead if you need additional salt.

Pork Teriyaki

Yields: 4 servings

Prep Time: 3-5 minutes |*Cook Time: 10 minutes | Total Time: 15 minutes

Ingredients

  • 1 - 1.5 lbs pork tenderloin (thinly sliced)
  • 1/2 white onion (chopped)
  • 1 small yellow bell pepper (chopped)
  • 1 small orange bell pepper (chopped)
  • 1 small red bell pepper (chopped)
  • 1 cup asparagus (quatered)
  • 1 serrano pepper (sliced)
  • 1 cup House of Tsang teriyaki sauce*
  • 1/2 - 1 tsp dark soy sauce (optional)

Instructions

  1. In a large nonstick skillet or wok, add all the vegetables and saute on high heat for 3-4 minutes.
  2. Then, add the pork and cook until it is almost done; about 4 minutes.
  3. Next, add in the teriyaki sauce and dark soy sauce and let simmer for 2 minutes. Taste and adjust seasoning.
  4. Serve along side white rice and enjoy!
