Not for the Kids Hot Chocolate
Yields: 4 servings
Ingredients:
For the Hot Chocolate
4 cups milk
1/4 cup unsweetened cocoa powder
1/3 cup granulated sugar
2 tbsps brown sugar
1-2 cinnamon sticks or 1 tsp ground cinnamon
1 tsp vanilla extract
2 oz cognac or brown liquor of choice*
For the Whipped Cream
1 1/3 cup cold heavy whipping cream
2 tbsps granulated sugar
1 tsp vanilla extract
1/4 cup cold Rum Chata*
*exclude if making a non-alcoholic version
Instructions:
For the Hot Chocolate
1. In a medium saucepan over medium low heat, gently warm the milk, cinnamon, vanilla and sugars. When the sugars have dissolved, slowly whisk in the cocoa powder until smooth with no powder chunks.
2. Heat mixture until hot, but never boiling; approximately 10-15 minutes.
For the Whipped Cream
1. Using an electric hand mixer, whip all ingredients together until they form stiff, firm peaks; approximately 7 minutes.
Together
1. In a serving mug, add 1-2 tsps of the cognac prior to adding the hot chocolate. Top with the whipped cream and a sprinkle of ground cinnamon. Serve while hot.
